In our October 17th show, Adam Warner visited Richter Orchards on Long Island and delved into one of America’s longest traditions: apple growing. Along with coming back with a feature on the family that has run the orchard for three generations, Adam brought back some of what are arguably Richter’s greatest treasures.
Applesauce Cake
- 1 cup sugar
- ½ cup shortening
- 2 cups flour
- 1 tsp. salt
- ½ tsp. cloves
- 2 tsp. cinnamon
- ½ tsp. nutmeg
- *1 tsp. Baking Soda
- 1 cup raisins
- 1 cup unsweet applesauce
Cream shortening. Beat until light, with sugar. Add soda dissolved in 1 TBSP warm water. Beat in applesauce. Add raisins or other fruits. Add dry ingredients. Bake in loaf or tube pan.

Apple Pie Cake
- 1 cup flour
- 1 cup sugar
- 1 tsp. salt
- ½ tsp. Baking Soda
- 2 ½ tsp. cinnamon
- ½ cup butter or margarine – softened at room temperature
- 1 egg
- 2 TBSP. boiling water
- 2 ½ cups apples peeled and cut into small cubes
- ¼ cup nuts (chopped)
Mix all ingredients together, except apples and nuts. Batter will be stiff. Fold in apples and nuts at the end. Pour into deep 9 inch greased pie plate and bake at 350 degrees, 40-50 minutes. Serve with whipped topping or sprinkle powdered sugar on top.

Hot Mulled Cider
- 2 quarts fresh cider
- 4 cinnamon sticks
- 6 – 8 whole cloves
- 1/2 whole nutmeg, crushed
In a non-aluminum pan simmer for 15 to 20 minutes. Strain. This is good hot or cold.

Apple Crisp
- 5 – 6 cups peeled sliced apples
- 3/4 cups quick cooking oats
- 3/4 cup brown sugar
- 1/2 cup flour
- 1/4 teaspoon cinnamon
- 1/2 cup butter
Arrange apples in 8 x 1 1/2″ pan. Combine oats, sugar, flour and cinnamon. Cut in butter. Spread over top. Bake at 350 degrees until apple are done.

Cider Tapioca
- 4 cups cider
- 1/3 cup minute tapioca
- 3 cinnamon sticks
- sugar to taste
Let stand for 5 minutes before cooking. Add a grated or chopped apple, and cook. Good warm or cold.

Apple Brownies
- 3 medium apples, diced in mixing bowl
- Add 1 cup flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 beaten egg
- 1/2 cup melted shortening
Mix together and put into 8″ x 8″ pan. Bake 40-45 minutes at 350 degrees. Nuts can be added.

Apple Butter
- 5 pounds tart apples in 2 cups cider – strain. Add:
- 3/4 teaspoon cloves
- 1/2 teaspoon allspice
- 3 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 to 3/4 cups for each cup pulp
Cook over low heat, stirring until sugar is dissolved. Cook, stirring often, until pulp sheets the spoon. Ladle into sterile jars and process. Makes about 3 pints.
